My 70 half cab has started to spit and sputter when I take the pedal to the metal. Seems like 3rd gear is worse than 2nd which is worse than 1st. I have rebuilt the single barrel carter carb, including accelerator pump, set the timing and the points, and installed a manual choke......still no luck in solving this problem. Any ideas??? TIA...

Seeing how is sounds like the sputter is worse with more load, I would start with the ignition before moving to the carb. What do the plugs and plug wires look like?

The plugs looked ok to me, but I bought a new set, confirmed the gap and installed them with no improvement.
What kind of ignition issues should I be looking at? Thanks.

and the wires are new. no vacuum leaks identified, either.

Cap condition? Plug wires? Any burns, cracks, or white chalky residue from arcing? Also you need to check the impedance of wires to make sure none of them have broken into inside the insulation.
