I'd keep the 90 bone stock and pollished up, that being said I would take the 89 apart.
To make that fun off road you could cut the top, use a ranger bed to fnish the rear quarters, soft top it. Drop it on an eb chassy( you can still find a roted out one for a reasonable price) so the driveline will be stout and fit the body best.
I seem to remember duffs helped build one like that a while back. I saw it in an old ford truckin rag.
